How We Raise

Real grass, real outdoors, real food

Our South Poll cattle live the way cattle are supposed to — out in the open on pasture that we manage for the health of the land and the animal. Here's what that means:

  • Grass and forage only. The cattle's diet is grasses and other natural forages — no grain, no food waste, no by-products.
  • Nothing added. The only supplement given is a simple, all-natural ground mineral.
  • Fresh water always. The cattle have access to clean water at all times.
  • Raised outside, naturally. They live out on pasture with natural shelters — not in confinement.
  • No hormones, ever. No growth stimulants or steroids are used at any point in the animal's life.
  • A pasture-bred breed. We raise South Poll cattle, selected to produce flavorful, well-marbled beef on pasture alone.
  • Caring for the ground too. Our pasture management is built to regenerate the farm ecosystem and to pack more nutrient density into the beef. No herbicides, no pesticides, no harsh synthetic fertilizers — our operation is genuinely good for the environment.

Why pasture-raised is healthier meat

Besides knowing your beef was humanely and happily raised, and the real difference in taste, grass-fed beef is simply better for you. Beef raised on pasture holds more vitamins and minerals, plus nutrients like CLA (conjugated linoleic acid) that simply aren't found in conventional, confinement-fed beef. That's not a buzzword — it's just what eating grass does.

Beef Shares

Buy a share, get what you want

We're selling shares of beef cattle, slaughtered and butchered at Wintersteen Custom Butchering, vacuum-packaged and frozen. You pick your own cuts — steaks, roasts, stew beef, ground beef, burger patties. Shares range from roughly 100 to 520 lbs of take-home meat. Splitting a share with family or friends is welcome (and encouraged) — you just pay for and pick up the whole share as one unit, then split it up yourself.

We only slaughter once a year in the fall – so our beef finishes on the best grass and forage we can grow.
How pricing works: The final hanging weight of your share isn't known until the cattle are slaughtered, and your price is based on that hanging weight. That's not the weight you take home — it includes the parts that aren't used (bones, head, hooves, blood). Many beef cattle yield about 60% of hanging weight; South Poll are known for excellent yields and can come closer to 70%. You pay slaughter and butcher costs directly to the butcher (around $700–$900 for a whole beef – depending on the cuts and packaging chosen), and that means you get to pick your own cuts.
